Six steps.
No shortcuts.
Wheat flour, jaggery, ghee — measured by feel, not by scale. The same proportions her grandmother used.
Each piece pressed by hand. No mould, no machine. Just fingers and patience — the fork marks help it cook evenly from inside.
In a kadhai, over a steady flame, in pure ghee. The oil has to be exactly right. Rashmi watches it. You can't walk away.
After frying, they rest. This is where the texture settles — crisp outside, dense and yielding inside. Rushed cooling ruins it.
Carefully. By hand. Each box or bag sealed by Rashmi herself. No assembly line, no staff.
